In Germany we like a light and mainly a cold dinner, the warm meals are reserved for lunch. A popular dish for a cold dinner is the German authentic egg salad. If you can get German bread, you can place some of the salad on a buttered slice of bread. Great with sausages like Bratwurst or Frankfurters. It’s also a delicious snack. Happy Cooking!
Ingredients German Authentic Egg Salad
6 eggs, hard boiled
125 g Greek natural yogurt
1 tbsp mayonnaise
2 tsp German mustard, medium
1 tsp capers
8 small pickles
salt, pepper, nutmeg, cayenne pepper to taste
- Boil eggs.
- Place them for 2 min in cold water, peel.
- Cut eggs in slices.
- Chop pickles.
- Combine all other ingredients to make the dressing (yoghurt, capers, mustard, spices, mayonnaise)
- Add eggs.
- The egg yolk should mix with the dressing.
- Add chopped parsley before serving.
